Cacao beans from the Bejofo Estate on Madagascar, which is a massive estate that grows some world famous cacao. After the fermentation process, the beans are layed in the sun to dry for 2 hours the first day, 4 hours the second day and 6 hours the third day.  Then 8 hours per day from then onwards.

We call this "Slow Dried" because it is obviously a much slower process than our Magadagascar 64 % Fast Dried chocolate, where the beans dry 8 hours per day from day one. The difference in the drying process gives a completely different flavour profile, although they both have clear and rather simple tasting profiles.

Our Madagascar 64 % Slow Dried is a bit more complex compared to our Madagascar Fast Dried and has notes of raspberry.
